Clary - A medieval recipe for Mulled Wine - Originally made with honey this drink is a little different from a modern mulled wine. Of the three blends I make this has the most ingredients, containing 3 types of pepper it has a warming flavour that is enhanced with the addition of a little brandy before serving.
Clary was originally made using honey, however, sugar became cheaper and more available, and it became the more popular choice. For best results, use runny honey or brown sugar, - which will also be perfect for a vegan version. White sugar is not recommended for making Clary.
INGREDIENTS: Ginger, Black pepper, Nutmeg, Cloves, Galangal, Caraway, Mace, Cinnamon, Coriander Seed, Grains of Paradise and Long Pepper
To Make: you will need 1 standard size bottle (75cl) of wine - white or red, not too dry.
Contents: 1 x reusable muslin bag, spices for Clary, and instructions.
